Walter and the magical Pre Inka Cuisine

“Hello sons and daughters of Pachamama, Mother Earth, and Wiracocha, all the energies of the Universe. We are the people, we are the citizens of this beautiful world, Paradise. My name is Walter Bustamante and I’m from Arequipa, Peru.

Our restaurant is called Sonccollay and it’s unusual, different from all you know. We cook as people used to cook 10.000 years ago, the ancient way to cook: no oil, garlic, onion, or pepper; just native herbs and Love. You have to renew your energy and give long life to people. Ancient Peruvian people lived from 135 to 150 years of age.

We roast everything on hot volcanic stones: corn, native black chicken, alpaca meat, many varieties of potatoes, shrimps, etc… We use spices such as oregano, strong mint, and seaweed.

The restaurant has a terrace from which you can admire the main square, Plaza de Armas, the church, and the cathedral, built over an ancient pyramid dedicated to the fertility of Mother Earth. From the roof, it is possible to see the three volcanoes: Misti, Chachani, and Pichu Pichu”.
