“I’m Katherine, born and raised in Scotland. I used to own a restaurant there, but I’ve been living in Spain for 20 years. For the last 9 years I’ve been engaged in cheese tasting and selling in my cheese shop. I wanted to work with a product without needing to cook it or serve it with other dishes.
I sell the cheese produced by the best farms in the Spanish dairy industry. I serve from 20 to 25 types of cheese, some of which arrive just once a month like ‘pumpkin cheese’, a cheese from Cantabria which looks like a pumpkin for its tiny and slightly flattened shape.
The clients can enter the cold store room, whose temperature varies between 8° and 12° C, they select the cheese and taste it in a small and cosy room that contains a maximum of 14 people.
Another original idea is the cheese ice-cream, created through the collaboration with a nearby ice-cream parlour. At the moment we have 3 flavours: cow, sheep, and blue cheese.
I wrap up the cheese into very original cardboard boxes that make the purchases become precious gifts. The boxes’ covers and labels are made with newsprint”.
