Sri Lanka on a plate – part I

“My name is Asela Sebastian Fernando and I’m the owner of Oysters restaurant. My parents inaugurated the restaurant in 1973, back when it was still one tiny room with four tables.

I cook everything to order, on the spot, apart from legumes which require a long prepping time.

Thanks to my open kitchen facing the main room, I can communicate directly with my customers. And they can see what I’m doing.

I like to show my customers around the kitchen so they can see how I make my special dishes.

The most important thing in my kitchen is that all ingredients must be fresh and genuine.

I make a mean curry, both with meat and fish, and many more traditional Sri Lankan dishes.

I also make the most delicious hamburgers“.
